Foodvit Ice Cream Stabiliser Powder 100g
The ice cream stabiliser is a combination of glucose syrup, locust bean gum and carrageenan, designed to delay crystals forming as ice cream freezes. This ensures a smooth texture and softer scoop. It also helps improving volume, and slows melting. The ice-cream stabiliser plays a similar role to the sorbet stabiliser, but in addition acts to help dispersion and emulsification of fatty acids in the ice-cream mix, to further prevent separation and improve mouthfeel.

  • Improves Mix Viscosity: The most important factor responsible for enhancing the viscosity of an ice cream mix is the addition of stabilizers.
  • To Produce Smooth and Creamy Texture: The use of stabilizers improved creaminess and reduced wateriness in ice cream.
  • To Provide Resistance against melting: Stabilizers significantly affect the melting quality of ice cream through their viscosity-enhancing properties. As viscosity improves, the rate at which ice cream melts slows significantly. The slow meltdown, good shape retention, and slower foam collapse are some of the important quality parameters of ice cream.
  • Reduces ice and lactose crystal growth during storage: Stabilizers are added to ice cream mainly to retard or reduce ice and lactose crystal growth and recrystallization during storage (or mask the effects of crystal growth), especially during periods of temperature fluctuation, known as heat shock.
